Ammu’s chicken biryani

Ingredients

Store Cupboard

  • 200g of plain flour
  • 500g of basmati rice, good quality
  • 5 tbsp of salt
  • 1cm of mace, crushed
  • 1/4 tsp sugar

Salad & Fresh Herbs

  • 1/2 tsp saffron strands
  • 6cm of fresh ginger, grated

Dairy

  • 80ml of full-fat milk
  • 8 tbsp of ghee, or vegetable oil (sometimes I mix both and it works really well)
  • 2 tbsp of Greek yoghurt, full-fat

Fruit & Vegetables

  • 2 white onions, thinly sliced into half moons
  • 3 garlic cloves, crushed
  • 1/2 tsp chilli powder
  • 1/2 lemon, juiced

Fresh Meat

  • 1kg bone-in chicken thighs, skinless

Spices & Dried Herbs

  • 2 green cardamom pods
  • 2 cloves
  • 1cm of cinnamon stick
  • 1/4 tsp freshly grated nutmeg
