Estofat de pop i patata – Catalan octopus stew

Ingredients

Fish & Shellfish

  • 1 large octopus, weighing approx. 2kg, defrosted (if frozen)

Fruit & Vegetables

  • 1 onion, halved
  • 2 onions, diced
  • 5 garlic cloves, sliced
  • 4 tomatoes, quartered with the core cut out
  • 4 large potatoes

Spices & Dried Herbs

  • 3 bay leaves
  • 1 tbsp of sweet paprika
  • 2 bay leaves

Oils & Vinegars

  • 2 tbsp of olive oil

Beverages

  • 150ml of white wine

Store Cupboard

  • Tabasco, (optional)
  • salt

Salad & Fresh Herbs

  • 1 handful of parsley, chopped
