Broccoli, leek and potato soup

Ingredients

Oils & Vinegars

  • vegetable oil, for frying
  • white wine vinegar, or lemon juice
  • extra virgin olive oil

Fruit & Vegetables

  • 250g of leek, sliced
  • 200g of potatoes, finely sliced
  • 250g of broccoli, (1 small head)

Beverages

  • 600ml of water, or vegetable stock

Store Cupboard

  • salt
  • pepper
  • 1 handful of almonds, toasted and roughly chopped

Salad & Fresh Herbs

  • 1 handful of chives, finely chopped
