Bengali-style chicken rezala korma with cashew and poppy seeds

Ingredients

Fresh Meat

  • 1kg chicken, skinned and jointed into 8 pieces

Salad & Fresh Herbs

  • fresh ginger, 1 inch piece, peeled
  • 1 bay leaf
  • 1/2 tsp coriander seeds

Fruit & Vegetables

  • 4 garlic cloves, peeled
  • 2 red onions, peeled and chopped roughly

Dairy

  • 500g of Greek yoghurt
  • 2 tbsp of ghee

Store Cupboard

  • 2 tbsp of cashew nuts, unsalted
  • salt to taste
  • 1/2 tsp black peppercorns
  • 1 tsp pandan essence, or kewra water

Spices & Dried Herbs

  • 2 tbsp of poppy seeds
  • 1 cinnamon stick
  • 4 green cardamom pods

Oils & Vinegars

  • 2 tbsp of vegetable oil
