Loin of hare, creamed celeriac tart, haunch braised in chocolate beer

Ingredients

  • 4 hare loins
  • 4 hare legs

Salad & Fresh Herbs

  • 1 onion, sliced
  • 2 garlic cloves, crushed
  • 6 juniper berries, crushed
  • 1/2 celeriac
  • 1 pointed cabbage

Alcohol

  • 300ml of chocolate beer

Cooking Sauces

  • 500ml of brown chicken stock, or hare stock

Store Cupboard

  • 50g of bitter chocolate
  • 200g of plain flour
  • 1 egg yolk
  • 2 tbsp of grain mustard

  • 200g of salted butter
  • 100g of butter, melted
  • 300g of whipping cream
  • 1 knob of butter
