Beef short rib birria tacos with black beans and chipotle jus

Ingredients

Fresh Meat

  • 2kg beef short rib

Fruit & Vegetables

  • 1 onion, finely chopped
  • 1 leek, roughly chopped
  • 7 garlic cloves, finely chopped
  • 1 tin of black beans, drained
  • 3 limes, quartered

Store Cupboard

  • 70ml of soy sauce
  • 70ml of ketchup
  • 130g of brown sugar
  • 1 1/2 tbsp of salt
  • 300ml of chicken stock, good quality
  • 1 tsp salt
  • sesame seeds, a mixture of black and white

Spices & Dried Herbs

  • 1 tbsp of cayenne pepper
  • 3 star anise
  • 4 dried chipotle chillies

Delicatessen

  • 5 dried porcini mushrooms

Alcohol

  • 440ml of porter, or other dark beer

Oils & Vinegars

  • 2 tbsp of oil, or lard

Salad & Fresh Herbs

  • 1 sprig of marjoram
  • 1 bunch of coriander
