Slow-cooked beef shin with quinoa, wild garlic and Parmesan

Ingredients

Fresh Meat

  • 1kg beef shin, on the bone

Fruit & Vegetables

  • 1 carrot, chopped
  • 1 onion, chopped
  • 1 leek, chopped
  • 1 stick of celery, chopped
  • 2 spring onions, finely sliced
  • 100g of wild garlic
  • 1 handful of wild garlic, leaves and stems separated

Beverages

  • 500ml of red wine

Store Cupboard

  • 1l chicken stock
  • salt
  • 50g of red quinoa
  • 500ml of vegetable stock

Delicatessen

  • 500ml of veal stock

Salad & Fresh Herbs

  • 1 sprig of thyme
  • 1 bay leaf
  • 1 tbsp of parsley, finely chopped

Oils & Vinegars

  • vegetable oil
  • 200ml of pomace oil (1)

Spices & Dried Herbs

  • freshly ground black pepper
