Beef rendang

Ingredients

Fresh Meat

  • 1kg chuck steak

Speciality Ingredients

  • 50g of beef dripping, or lard or vegetable oil
  • 500ml of coconut water, (the kind sold fresh for drinking)
  • 1 tbsp of tamarind paste
  • 50g of galangal, peeled
  • 700ml of coconut water, (the kind sold fresh for drinking)

Spices & Dried Herbs

  • 2 cinnamon sticks
  • 2 cloves
  • 2 star anise
  • 2 kaffir lime leaves
  • freshly ground black pepper

Store Cupboard

  • 50g of desiccated coconut, toasted
  • 1 tbsp of fish sauce
  • 250ml of beef stock
  • sea salt
  • 300g of basmati rice

Cooking Sauces

  • 1 tbsp of kecap manis, or light soy sauce

Fruit & Vegetables

  • 1 lime, juiced
  • 100g of shallots, peeled
  • 1 garlic bulb, cloves peeled
  • 3 red chillies

Salad & Fresh Herbs

  • 50g of fresh ginger, peeled
  • 3 lemongrass stalks
