Beef pesto

Ingredients

Fresh Meat

  • 1.5kg beef fillet, mid fillet, trimmed

Cooking Sauces

  • 400ml of tamari, or 500ml soy sauce

Oils & Vinegars

  • 250ml of cider vinegar
  • vegetable oil
  • 350ml of olive oil
  • extra virgin olive oil
  • 150ml of cider vinegar
  • 350ml of olive oil

Fruit & Vegetables

  • 1 red chilli, moderately hot
  • 6 garlic cloves, peeled
  • 6 garlic cloves, peeled

  • 2 raw beetroots, medium, peeled and finely julienned

Salad & Fresh Herbs

  • 80g of basil leaves
  • 20g of mint leaves
  • 40g of parsley leaves
  • 400g of chard, thinly shredded, stems included, and washed well

Store Cupboard

  • 120g of pine nuts, lightly toasted
  • 65g of grain mustard
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper

Cheese

  • 120g of Parmesan, finely grated

Delicatessen

  • 200g of black olives
