Ingredients
Fresh Meat
1 beef marrow bone, sliced into 3cm discs (ask your butcher)
1kg beef short rib
1 rib-eye roll, approx. 1.5kg, with plenty of fat
Oils & Vinegars
3 dashes of vegetable oil
olive oil, enough to cover the potatoes (how much you need will depend on the size of your baking dish)
sherry vinegar, to taste
Store Cupboard
600g of beef stock
salt
1 sprig of rosemary
100g of dried mushrooms
Fruit & Vegetables
100g of button mushrooms, sliced
2 banana shallots, large, sliced
2 carrots, medium, sliced
6 Jersey Royal potatoes, medium
3 garlic cloves, bashed
8 onions, sliced
302 courgettes, deseeded and cut into 12 neat, even shapes
100g of baby spinach
Spices & Dried Herbs
2 fennel, small, sliced
Beverages
250ml of red wine
75ml of white wine
4l water
Salad & Fresh Herbs
1 sprig of fresh thyme
1 bay leaf
6g of tarragon
25g of basil leaves

2 knobs of butter
Cheese
20g of cheese, ideally Old Winchester but Parmesan can also be used, grated
Speciality Ingredients
1 pinch of xanthan gum
