Carpaccio of beef with a sweet and sour onion and green bean salad

Ingredients

Fresh Meat

  • 400g of beef fillet, all fat and sinew removed

Store Cupboard

  • sea salt
  • pepper
  • 4 tbsp of sugar
  • sea salt

Oils & Vinegars

  • olive oil
  • 4 tbsp of red wine vinegar
  • extra virgin olive oil

Salad & Fresh Herbs

  • 15g of thyme leaves, fresh
  • 4 sprigs of flat-leaf parsley
  • 4 sprigs of tarragon
  • 1 bunch of watercress, any large stalks removed

Fruit & Vegetables

  • 2 red onions, peeled, halved and sliced thinly
  • 100g of green beans
  • 1 lemon, juiced
