Baked skate wings with mushroom, shallot and Le Gruyère AOP gratin


Fish & Shellfish

  • 2 skate wings, or ray wings, each approx. 400g

Fruit & Vegetables

  • 150g of button mushrooms, thinly sliced
  • 1 banana shallot, finely chopped


  • 175ml of dry white wine


  • 25g of butter, plus extra for dotting the fish
  • 1 tbsp of crème fraîche

Store Cupboard

  • 25g of plain flour
  • salt


  • 100g of Le Gruyère AOP, grated

Salad & Fresh Herbs

  • 1 small bunch of flat leaf parsley, finely chopped
