Bajan salt cod fish cakes with chilli sauce

Ingredients

Fish & Shellfish

  • 450g of salt cod fillet, soaked for 24 hours and with the water changed twice, cooked and flaked

Fruit & Vegetables

  • 2 large potatoes, peeled, boiled and mashed
  • 1 onion, peeled, chopped and boiled with the potatoes
  • 1 red chilli, finely diced
  • lime, cut into wedges

Store Cupboard

  • 50g of plain flour

Dairy

  • 100ml of milk

Oils & Vinegars

  • 1 tbsp of vegetable oil
  • vegetable oil, for frying

Cooking Sauces

  • 2 tbsp of Bajan seasoning

Salad & Fresh Herbs

  • chopped parsley

Spices & Dried Herbs

  • chilli sauce, Bajan
