Braised stuffed lamb hearts

Ingredients

Fresh Meat

  • 2 lamb hearts, trimmed of excess fat, tubes and gristle removed
  • 100g of sausage meat
  • 6 rashers of smoked streaky bacon

Fruit & Vegetables

  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 1 onion, roughly chopped
  • 1 carrot, roughly chopped
  • 1 celery stick, roughly chopped

Salad & Fresh Herbs

  • 4 sprigs of lemon thyme, leaves picked and chopped
  • 1 bunch of parsley, small, leaves only, finely chopped

Store Cupboard

  • 25g of breadcrumbs, stale
  • salt
  • pepper

Oils & Vinegars

  • olive oil, for frying
  • 5 tbsp of balsamic vinegar, good quality (to finish the sauce)

Beverages

  • 300ml of red wine, spicy Shiraz is good

Spices & Dried Herbs

  • 1 bouquet garni, (thyme, parsley and bay)
