1kg asparagus, peeled and cut into 6-8 cm lengths
100g of spring onions, chopped
Delicatessen
140g of Parma ham
Salad & Fresh Herbs
1 bunch of chervil, chopped
1 pinch of chives, chopped
Cheese
350g of mascarpone
Store Cupboard
3 eggs
5 egg yolks
1 1/2 tsp salt
1 pinch of black pepper
400g of plain flour, plus extra for dusting
Dairy
200g of butter, cold and diced, plus extra for greasing
Beverages
ice cold water
