1kg unsmoked gammon joint

1 onion, peeled and roughly chopped
1 carrot, peeled and roughly chopped
1 celery stick, roughly chopped
1kg new potatoes
Spices & Dried Herbs
1 tsp peppercorns
1 tsp smoked paprika
Salad & Fresh Herbs
1 bunch of fresh thyme
3 sprigs of fresh tarragon

2 tbsp of apricot jam
1/2 tbsp of maple syrup
1/2 tbsp of wholegrain mustard
salt
3 tbsp of mayonnaise
Oils & Vinegars
1/4 tsp white wine vinegar
3 tbsp of vegetable oil
