Afghani-style mutton chop karhai with pepper, coriander and cumin

Ingredients

Fresh Meat

  • mutton, 6–8 chops (depending on size)

Spices & Dried Herbs

  • 1 tbsp of cumin seeds
  • 1 green chilli, finely chopped, to garnish (optional)

Salad & Fresh Herbs

  • 2 tbsp of coriander seeds
  • 2 tsp fresh ginger, grated, plus 1 thumb-sized piece julienned
  • 2 tbsp of chopped coriander, to garnish

Store Cupboard

  • 1 tbsp of black peppercorns
  • 1 tbsp of dried crushed chillis
  • 1 tsp salt

Dairy

  • 1 tbsp of ghee

Fruit & Vegetables

  • 1 tsp garlic, grated
  • 8 tomatoes, sliced
  • juice of half a lemon, to serve
