How to make brown veal stock

Ingredients

Oils & Vinegars

  • vegetable oil

Fresh Meat

  • 3kg veal bones, chopped into pieces
  • 1 pig's trotter, (optional) – this gives the stock extra body

Fruit & Vegetables

  • 2 onions, finely sliced
  • 1 carrot, finely sliced
  • 1 leek, finely sliced
  • 1 celery, finely sliced
  • 1 garlic bulb, halved horizontally

Store Cupboard

  • 50g of tomato purée
  • 1 tsp black peppercorns

Beverages

  • 300ml of red wine, although you can also use white wine or brandy if you prefer

Salad & Fresh Herbs

  • 1 bunch of thyme

Spices & Dried Herbs

  • 3 bay leaves

Speciality Ingredients

  • 1 sheet of kombu, (optional) – this gives the stock even more umami
