William Drabble

Starting off his career as an unpaid kitchen worker at the age of 14, William Drabble earned his first Michelin star by the time he was just 26 at the Nool Country House Hotel in Grasmere, before moving onto the trendy Aubergine in Chelsea where he earned his second star in 1999. In 2009, he moved to the Seven Park Place restaurant at the St James's Hotel and Club, where within two years he had gained another Michelin star and been awarded four AA Rosettes.

Drabble displays an acute understanding of seasonality and channels this in evocative signature dishes of Lune valley lamb with confit potatoes, caramelised onion and thyme jus, Marinated hand dived scallops with Dorset crab and blood orange and Poached lobster tail with cauliflower purée and lobster butter sauce.

Seven Park Place

St James hotel and club – just away from the bustle, dripping with elegance – is notable for being one of the most intimate and relaxing establishments in London.

The venue combines rooms, a club of the old-school variety, and two places to eat overseen by William Drabble: the main restaurant Seven Park Place, and the more informal William’s Bar and Bistro. Serving as exec chef since 2009, Drabble has rejuvenated modern French cuisine there in all of its luxuriousness, and has found himself the surroundings to match.

With a dining room that wouldn’t look out of place in fin de siecle Paris or one of Prague’s more rococo tea, cake and absinthe dens, Seven Park Place screams luxury as soon as you walk in. There’s a formal air in service, and respect for this expected from the clientele, to match. With a la carte, afternoon tea, and private dining “dinner parties” available – as well as cheese and wine master classes – there’s a focus on choice as well as intimacy and exclusivity.

Unusual for such a fine restaurant, there is a lively atmosphere maintained largely due to the intimacy of the venue itself. Wines are carefully selected and are keeping with the French feel of the restaurant.
