These watermelon rockets will refresh little ones as they expend energy on a hot day. They are incredibly simple to prepare and are healthy, too

Method
1.
Slice the melons so that each slice is around 1-2cm wide, or wider if desired. Cut the slices into bite-sized triangular pieces
Room for a little one
Children will have fun using cutters to cut small shapes into the melon
2.
Place the fruit pieces on to the lolly stick or skewer alternating each melon until you reach the top - leaving a little handle at the base
3.
Line a tray with parchment paper. Lay each lolly down flat onto the tray and freeze for a minimum of 3 hours or overnight
Lighten it up
Sprinkling the fruit lollies with ground almonds before serving will not only add a nutty flavour, but also lend a nice protein boost to this summer treat
