The head mixologist at Adam Gray's Skylon, Nebojsa Kutlesic, recommends serving this flaming Metaxa cocktail alongside medium rare duck and sipping slowly to savour the flavour. Metaxa is a Greek spirit made from wine, herbs and rose petals; XTA is a Mexican liqueur.

Ingredients

  • 40ml of Mataxa
  • 15ml of XTA
  • 10ml of Kummel Wolfschmidt liqueur
  • orange peel, zest only

Equipment

  • Goblet glass

Method

Combine the Mataxa, XTA and Kummel in a small copper or metal pot with a handle. Swirl to combine and carefully ignite the mixture
  • 40ml of Mataxa
  • 15ml of XTA
  • 10ml of Kummel Wolfschmidt liqueur

Twist and squeeze all the natural oils out of the orange peel into the flaming liquid and discard. To add an element of theatre, slowly pour the flaming liquid into a second goblet or brandy balloon
