Cardamom strawberries

Shaun Hill's cardamom strawberries recipe represents a magnificent way to spice up this summer ingredient. Serve alongside ice cream, a summer dessert, or simply on their own with a dollop of cream.

Add the strawberries to a heatproof bowl and set aside

Add the orange juice, cardamom seeds, sugar and honey to a pan, bring to the boil then pour the mixture over the strawberries. Set aside for 5 minutes to cool and infuse

Once infused, remove from the pan and serve

Shaun Hill is one of Britain's most enduringly successful chefs. He began his career in 1966, working for Robert Carrier in his Islington restaurant. He went on to work in some of London's most prestigious addresses including The Capital Hotel in Knightsbridge and Blakes in South Kensington
