This collection of squid recipes features a wonderful range of dishes for this fantastic cephalopod. Despite being a brilliant ingredient, squid is frequently underappreciated by consumers who have experienced the misfortune of eating improperly cooked squid. Squid needs to be cooked quickly, or it must be cooked over a long period of time. Otherwise, it will be tough and rubbery, rather than achieving the beautifully sweet, light and tender texture and taste squid is so prized for.

In British waters, the European and Atlantic squid are the most commonly caught varieties, mostly caught around Scotland. The season for squid in the UK runs from late August through to November, so enjoy fresh British squid at its peak. When possible, seek out jig-caught squid, as this is the most sustainable form of fishing squid, and it is often undertaken by smaller fisheries. You can ask your fishmonger to clean the squid for you, or you can watch our video and learn how to clean a squid yourself.

Fresh squid is wonderfully versatile and easy to prepare, providing a good punch of protein while also being low in fat. It is inexpensive and easy to cook, and is a wonderful star or supporting player in different styles of recipes. Martin Wishart's Oriental pork recipe marries the lovely flavours of pork and squid together, while Robert Thompson's risotto nero features a squid beautifully sautéed. Galton Blackiston's fried squid recipe has an excellent tomato and pepper compôte as a delicious partner.
