Vineet Bhatia from Rasoi explains how to prepare the perfect chicken tikka marinade

To make the perfect chicken tikka marinade all you need to do is follow these simple steps and the ingredients below:

First Marinade for 600g chicken breast (leave for 20 min)
- 2 tbsp lemon juice
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 pinch salt

Second Marinade (leave for 6-24 hours)
  • - 1 tsp red chilli powder
  • - 1/2 tsp red chilli paste
  • - 100g natural yoghurt 
  • - 1/2tsp turmeric powder
  • - 1/2  tsp garam masala
  • - 20ml vegetable oil
  •  
1.     Slice the chicken breast into thin flat slices to help ensure that the chicken tikka marinade gets into the chicken       breast

2.     Create a first marinade of lemon juice, salt, ginger and garlic paste

3.     Coat the chicken thoroughly in the first marinade and leave for 20 minutes

4.     After 20 minutes create a yoghurt marinade, made from red chilli powder, red chilli paste, garam marsala powder, turmeric and oil.  Add this to the chicken and leave to and marinate for 6 hours
