Bjorn Frantzén – 19 October 2015

Sweden’s Bjorn Frantzén is the proud owner of two Michelin stars at Restaurant Frantzén. He learnt his craft with Tom Aikens, Raymond Blanc and Alain Passard, and within a year of opening his first restaurant, was awarded a Michelin star. He also runs The Flying Elk, Catering Frantzén, Studio Frantzén, Corner Club and Gaston Wine, and has consistently stayed in San Pellegrino’s ’World’s 50 Best Restaurants’ list since 2012.

Bjorn’s menu for this dinner is inspired by his gastropub, The Flying Elk, which features Nordic twists on traditional pub classics. His dinner at Selfridges includes an delicious sounding ‘English Breakfast’ with mie de pain roasted foie gras, pan-fried Swedish primuer egg, white Sorrana beans, maple bacon and duck jus, and a heavenly ‘Eton mess’ with whipped Earl Grey, sea buckthorns, crystalized seaweed and cloudberries.

Tickets for the NaCl dinner are £70 per person, which includes amuse bouche, an eight course tasting menu and petits fours.

The Nordic Academy of Culinary Leisure (NaCl) is a Danish-based group of chefs who create ‘show cooking’ pop up events. With the dinners taking place at a new venue each time, there are usually no limits on the chefs’ dishes. Each chef will make one or two courses and these will be served to a small number of guests, who are also invited into the kitchen where they can get behind the scenes. The group was initially formed in 2008 by a handful of chefs who had worked a top restaurants in Spain, but more and more chefs have joined since.

The chefs hosting the dinners at Selfridges will be Mette Dahlgaard (Geist), Martin Bjørn (Marv and Ben), Sylvester Andersen (AOC), Rasmus Leck Fischer (Gastronomisk Innovation), Christoffer Andersen and Adrien Norwood (Dragsholm Slot) and Lars Lundø (Pony). They have put together a wonderfully innovative menu, showcasing dishes such as braised monkfish, woodruff and apples; veal breast, smoked mackerel, caviar, fermented vegetables; finishing with a dessert of sea buckthorn and salted caramel.

Frida Ronge’s food combines seasonal Scandinavian ingredients with the flavours of Japan. After working at Japanese restaurants Yasuragi Hasseludden and Råkultur in Stockholm, she opened her own restaurant, vRÅ, in Gothenburg. As well as vRÅ, she runs Frida Ronge Food and Consulting AB and is a co-founder of Råkultur sushi restaurant in Stockholm.

Frida’s menu will reflect the minimalist mind-sets of Swedish and Japanese cultures: simplicity, precision and purity of flavours. We’re excited by her dessert of soy and caramel ice cream, plums, shiso and buckwheat.
